Champagne® Mango and Saffron Ice-Cream

  • 4 Large (or 5 Medium) Champagne® mangos
  • 1/2 cup sweetened condensed milk
  • 5 tablespoons sugar (Add more if you like it sweeter)
  • 1/2 teaspoon saffron strands (dissolved in 1 tbsp warm milk)
  • 1/2 cup heavy cream
  • 1/8 cup pistachio nuts (finely chopped (may substitute with your favorite nut))


Step 1 Wash and peel the mangos, then cut them into small cubes, discarding the pit and skin. Reserve 1/2 cup of fresh mango for garnish, and puree the rest of the mango in a blender to yield 2 cups.
Step 2 When the mangos are pureed, add the sweetened condensed milk and sugar. Blend until the sugar dissolves.
Step 3 Add the heavy cream and saffron strands dissolved in milk. Blend until mixture is soft and smooth.
Step 4 Add the chopped nuts and pulse in blender. Pulse just enough to mix the nuts into the cream.
Step 5 Pour the blended mix into ice-cream molds or in individual ramekins with lids. Freeze for six hours.
Step 6 To serve, let stand at room temperature for 5 minutes, or run molds under hot tap water briefly, just to loosen ice cream from the mold. Garnish with fresh cubes of champagne® mango and (optional) some more chopped nuts.
