Champagne® Mango Bread Pudding

This bread pudding is made with a base of coconut milk and features the sweet, delicate flavor of the champagne® mango, macadamia nuts and an array of other sweet spices. You've got to try it!

Ingredients

  • 4 eggs (large)
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 cups coconut milk
  • 1 1/2 cup heavy cream
  • 1/2 cup dark rum
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups Champagne® mangos (pitted, peeled, and chopped)
  • 1/2 cup grated coconut (toasted)
  • 1/2 cup macadamia nuts (chopped)
  • 5-6 cups day old bread (cubed)
  • Vegetable oil or Pam spray coat for a 10 x 14 inch baking pan

Directions

Step 1 Pre-heat oven to 325 degrees. Bring the coconut milk, heavy cream and vanilla to a simmer in a medium pot then add the rum. In a separate bowl, whisk together the eggs, brown sugar and granulated sugar. Slowly whisk the warm cream mixture into the egg and sugar mix until it is completely incorporated. Next, add the cinnamon, nutmeg, mango, coconut and macadamia nuts.
Step 2 Add the bread and mix well, letting the bread absorb the liquid. Pour mixture into a greased 10 x 14 inch baking pan and bake for about 60 to 75 minutes or until the center is moist but firm. Let stand 20 to 30 minutes before serving.
