Easy Chicken Breasts with Champagne® Mango and Cilantro

Ingredients

  • 4 chicken breasts (skinned, boneless)
  • 2 Medium Champagne® Mangos (peeled, seeded and cut in cubes)
  • 1/4 cup fresh cilantro (diced)
  • 2 Persian limes or 3 key limes (juiced)
  • salt and pepper (to taste)

Directions

Step 1 Salt and pepper the chicken and bake or grill until fully cooked; you can add other spices such as lemon-pepper depending on your taste.
Step 2 While the chicken is cooking, rinse the mangos and cilantro prior to cutting them. Mix the mango cubes with the cilantro and lime juice in a bowl. Set aside.
Step 3 When chicken is done, top with the mango mixture and serve while chicken is still hot. This recipe pairs well with white rice or a side salad. Enjoy!
