Fresh Fruit Shells with Champagne® Mango

  • 2 Champagne® mangos (peeled, seeded and chopped)
  • 2 kiwis (peeled and sliced)
  • 1 cup strawberries (stem removed, quartered)
  • 1 cup fresh blueberries (reserve 8 single berries for garnish)
  • 4 tablespoons butter (softened)
  • 5 tablespoons apricot jam
  • 8 tablespoons whipped cream
  • 8 small flour tortillas
  • 1/4 cup sugar
  • ground cinnamon (to taste)


Step 1 Preheat oven to 350 degrees Fahrenheit. Spread butter on both sides of each tortilla, then sprinkle sugar and ground cinnamon on top of butter. Place tortillas in a cupcake pan, squeezing them in so they mold with the shape of the cup. Bake for 6 minutes or until lightly browned, then remove from heat.
Step 2 Rinse and chop fruit, as listed on the ingredients section. Place cut fruit in a large bowl, then add the apricot jam. Mix the fruit and jam lightly to ensure an even mixture, but be careful not to mash the fruit.
Step 3 Once your shells are ready, place them on a platter or small ramekins and gently spoon fruit filling into each shell. Add a dollop (approximately a tablespoon) of whipped cream on top of fruit mix, then top with a fresh blueberry for garnish. Voila!

Optional: You can substitute with different types of fruit, depending on your taste
