Grilled Caesar Salad with Champagne® Mango and Shrimp

  • 1 head romaine lettuce (cut in half)
  • 1/4 cup oil
  • 4 Large fresh or frozen shrimp (boiled chilled)
  • 1 Champagne® Mango (peeled, seeded and cut lengthwise)
  • 2 Tbs red wine vinegar
  • 1 Tbs balsamic vinegar
  • 1 egg yolk
  • 1 Tsp crushed garlic
  • 1 anchovy fillet (minced)


  • 2 Tbs parmesan cheese (grated)
  • croutons


Step 1 Preheat grill to high.
Step 2 In a bowl, mix vinegars, egg yolk, garlic and anchovy together with a whisk, and slowly drizzle in the oil (a few drops at a time) to create a well-mixed, smooth texture.
Step 3 Next, place the romaine lettuce cut-side down on the hottest part of the grill, allowing it to char for about a minute.
Step 4 Remove lettuce from grill, and arrange on two plates. Serve with 2 shrimp on each plate, arranging several mango slices on top of the lettuce.
Step 5 Drizzle salad with the dressing and (optional) garnish with grated cheese and croutons of your choice.
