Marian’s Champagne® Mango Butter
|Serves||7 (8 oz) jars|

- 8 cups chopped Champagne® mangos (between 7-12 mangos, depending on fruit size)
- 2 cups sugar
- 1/4 cup lemon juice
- 1 teaspoon vanilla
- 1/4 cup water
- 7 8 oz mason jars (sterilized)
|Step 1||Cook the mangos, water, sugar and lemon juice in a pot at low temperature. Slowly bring mixture to a boil by stirring frequently for about 20 minutes. Add the vanilla and mix well. Remember to keep stirring to keep the mixture from sticking to the pan and burning!|
|Step 2||When the mixture is evenly cooked and thickened, transfer it to sterilized mason jars and seal according to standard canning instructions for jams (ex: process in a water bath for 10 minutes). |
