Marian’s Champagne® Mango Butter

Don't be fooled by the title of this recipe because it includes absolutely no butter! The smooth, fruity sweetness of the Champagne® mango is what you will experience as you enjoy this butter-like spread on your favorite crackers or bread.

Ingredients

  • 8 cups chopped Champagne® mangos (between 7-12 mangos, depending on fruit size)
  • 2 cups sugar
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla
  • 1/4 cup water
  • 7 8 oz mason jars (sterilized)

Directions

Step 1 Cook the mangos, water, sugar and lemon juice in a pot at low temperature. Slowly bring mixture to a boil by stirring frequently for about 20 minutes. Add the vanilla and mix well. Remember to keep stirring to keep the mixture from sticking to the pan and burning!
Step 2 When the mixture is evenly cooked and thickened, transfer it to sterilized mason jars and seal according to standard canning instructions for jams (ex: process in a water bath for 10 minutes).

Tip: For a smoother consistency, try dicing the mangos instead.
